White Bean Dip & Homemade Pita Chips

WHITE BEAN DIP
2 cans cannelloni beans
1 cup chopped fresh flat leaf parsley
3 garlic cloves
1 lemon
1/2 cup extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
PITA BREAD
1/3 cup extra virgin olive oil
1/4 cup oregano
Preheat oven to 350
Drain and rinse cannelloni beans
Chop parsley
For pitas, combine oregano, salt and pepper
Directions
Combine cannelloni beans, chopped parsley, garlic, lemon, salt and pepper into food processor. Blend and slowly pour in the olive oil.
Slice pitas into eight pieces. Place pitas on cooking tray. Coat one side with olive oil and mixture of oregano, salt and pepper. Bake in oven for 7 minutes until crispy.
